Low Carb Recipe – Aspartame Free Jello Dessert

Heather asked: â??I’ve been looking everywhere for a sugar-free jello/gelatin dessert that doesn’t have aspartame. Does anyone have any suggestions other than having to make my own? I tried making some with the Atkins syrup and plain gelatin, but it turned out with little flavor and way too sweet. Any help would be greatly appreciated!â? Here is our Recipe!

Hello Heather! You brought up an excellent topic that concerns many people on the Atkins Diet. Aspartame does not seem to be too popular with dieters these days and many, like you, want to indulge in a tasty treat without having to worry about it. Unfortunately, not a single company markets aspartame free jello so we are stuck making our own. But no worries, I have a perfect recipe for you.

  • 2 packages of Knorr Plain Gelatin
  • 2 cups warm and slightly boiled water
  • 2 cups of iced water
  • 1-2 packages of unsweetened/sweetened Kool Aide (your choice
  • ½ cup Splenda

Mix Splenda, Gelatin, and Kool Aide in large bowl. Now, mix your warm or slightly boiled water into the bowl and mix until there arenâ??t any chunks floating around. Now spread the mix in a baking pan (minimum of 8 ½ x 11 in. pan will be fine). Add your cold water and place in fridge. Let it sit until it has a nice jello consistency.
