Atkins Style Low Carb Brownies

This recipe was originally posted by “Julie in PA” on May 29, 1999. It was a hit back then, and if you at all miss sweets like brownies, then give this recipe a try. Post a comment once you’re done, and we’ll post it.

By the way, don’t try recipes like this when you’re on the Atkins Induction diet. . . you really need to stay down to the bare minimums with carbs during Induction. This may be a good thing to try when you’re in the Maintenance phase.

In any case, it sounds delicious, doesn’t it?!?!?! 

INGREDIENTS

  • 1/2 CUP BUTTER, ROOM TEMP
  • 2 EGGS
  • 1 1OZ SQ UNSWEETENED CHOCOLATE
  • 2 TSP CHOCOLATE EXTRACT
  • 2 TBSP WATER
  • 2 TBSP SOY FLOUR
  • 1/2 CUP COARSELY CHOPPED WALNUTS
  • 8 PKTS SUGAR SUBSTITUTE
  • 3 TSP CREME DE CACAO

DIRECTIONS

Cream butter with mixer. Add eggs, one at a time, beating well. Melt chocolate with extract and water in double boiler. Add melted chocolate, soy flour, chopped walnuts and sugar substitute to butter-mix well. Taste for sweetness-add more sugar sub if necessary. Grease 1 1/2 quart flat baking pan. Pour batter into pan. Bake at 350 for 15 min-check for doneness.
2 gm carb per square-should make 30 squares

    Hi-
    I’m a little concerned about my caloric intake. This recipe looks wonderful, but I was wondering if there would be any way to make this lower calorie. Thanks.

    How about this. . .
    Replace the eggs with egg substitute, and nix the walnuts.
    Give it a try and let us all know!
