Brie-Stuffed Portabello

Do you have company coming over, and don’t know what to make for appetizer? Need something low-cab and delcious? Try this fantastic brie-stuffed portabello. Your guests will love it, and not even know it’s low-carb! (Scale recipe depending on number of guests)

2 large portabello mushrooms
6 oz brie cheese
2 Tbsp pesto sauce 
1 Tbsp sherry
1 garlic clove
1 Tbsp butter

Lightly fry mushrooms with butter, sherry and garlic over medium heat. Drain. Dice brie into small pieces and place inside mushrooms. Add a 1/2 Tbsp pesto sauce on top of each. Place under broiler until cheese melts (less than 60 seconds) Serve right away.

Serves 2  
4 grams of carbs per serving.
