Classic Egg Nog the Atkins way

Ahhh the holiday season is nearing ,people bringing out their thick jackets, dads taking out the large shovels out of the shed. But what holiday season will be complete with out the usual holiday treats like candy, fruit cake, turkey, etc. Then there is the holiday eggnog, problem is with all the stuff we eat at holiday seasons do you think we should drink egg nog with whipped cream? Imagine the calories on that, but now thanks to Atkins we can enjoy this holiday drink with out putting in the pounds and the sugar.

Ingredients:
1/2 cup plus 2 Tablespoons Sugar substitute (e.g. Equal, Splenda, NutraSweet , etc)
2 eggs, separated
1/4 teaspoon salt
2 cups heavy cream
2 cups water
1 teaspoon vanilla extract
Brandy or rum flavoring to taste
1 teaspoon eggnog flavored oil (LorAnn or Amish brand) [optional]
1/2 cup whipping cream, whipped with Sugar substitute Ground nutmeg and/or maceBeat 1/2 cup sugar substitute with egg yolks. Add salt, stir in 2 cups cream and 2 cups water. Cook over medium heat,  constantly stirring, until mixture coats a spoon. Remove from heat and allow to cool. Beat egg whites until foamy then gradually add remaining Sugar substitute, beating to soft peaks. Add to cooked mixture and blend thoroughly. Add vanilla and flavoring(s). Chill at least 3-4 hours.

Pour into punch bowl or cups. Dot with “islands” of whipped cream. Sprinkle with nutmeg and/or mace.

Serves 4.   4 grams per serving.
