Atkins Diet Mashed “Potatoes”?

Mashed potatoes anyone? Mashed potatoes are one of the most sinful indulgences we can sink our teeth into. But now there is a way to enjoy mashed potatoes on the Atkins Diet without ingesting the carbs it comes with.

1 fresh head of cauliflower
1 cup Dixie Diner Mashers Potato Mix
1/4 cup sour cream
1/2 cup cream cheese
4 Tablespoons butter substitute (I cant believe it’s not butter , Smart Balance, ETC) 
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon onion powder
1 egg yolk
1/4 cup chopped fresh basil, cilantro, or parsley
1 teaspoon chicken stock seasoning (optional)

Place cauliflower in large pot of water. Bring to boil over high heat; reduce heat, partially cover, and simmer 15 to 20 minutes until very tender. Drain extremely well. 

In a small microwave safe bowl, add cream cheese and butter substitute and heat in microwave 30-40 seconds to slightly melt.

Place in cauliflower food processor bowl. Add in sour cream, cream chese-butter mixture, onion powder, salt, and pepper. Add egg yolk and pulse until well mixed. Add in Dixie Diner Mashers Potato dry mix and pulse until fluffy. (If mixture is too dry, a teaspoon or two of heavy cream will fix this.) Add basil, and chicken stock seasoning (if using). Mix well. Serve with low-carb gravy or with additional butter.
