Low Carb Cinnamon Walnut Cookie Chews

Generally speaking, there’s no such thing as a cookie for the Atkins diet. But these Walnut Chews are delicious. Cook ’em up and post a comment!


1 stick (1/4 lb) unsalted butter
1/2 cup Brown Sugar Twin
1/2 cup Splenda
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup Atkins bake mix
1  1/2 teaspoons cinnamon, divided
1 teaspoon vanilla extract
1/2 cup sour cream
2 teaspoons seltzer water
1 cup lowcarb (Splenda Sweetened Darrel Lea) chocolate chips
1  1/2 cups chopped toasted walnuts

Preheat oven to 375°F.

Soften butter. Whisk butter until fluffy,and mix in sweeteners, egg and vanilla. In second bowl,combine Atkins bake mix, salt and half of cinnamon. Gradually stir dry ingredients to butter mixture. Mix in sour cream and water. Add walnuts. Place about 1″ apart on non-stick baking sheets. Sprinkle with left-over cinnamon. Bake at 375°F for 12 to 15 minutes until crisp. Let cool.

Makes 20-24 cookies. Approx. 2 carbs per cookie.

    I love all your receipes! I receive your emails at work so I print, cut and retape together the receipe (to take all the ads out), then photocopy the final results and I’m making my very own Atkins Cookbook. I’m putting all the pages into plastic sleeves, then into a three ring notebook. I almost have enough receipes to start dividing my cookbook into catagory sections. Keep sending them – they’re great !

    Hmmmm I am intrigued. Cookies while on Atkins? 2 carbs each? Are they super tiny cookies that I would have to eat at least ten of, or normal sized?
