Low Carb Recipe – Chicken Enchiladas

Renee came up with a great recipe for Chicken Enchiladas.  Try it out and let us know what you think!

What you need:

  • low carb tortillas (found at walmart)
  • El Patio red enchilada sauce
  • full chicken
  • cheddar cheese
  • olives
  • sour cream
  • green onions

 

Procedure

  1. Dip low carb tortillas (I found them at Walmart) into El Patio red enchilada sauce (2 carbs per 1/4 cup). 
  2. Fill tortilla with shredded chicken and shredded cheddar chese
  3. Roll up and place in baking pan. 
  4. Fill pan with the remaining tortillas prepared the same way. 
  5. Sprinkle more shredded cheese over the top of the cassarole pan to cover all enchiladas
  6. Add a few sliced black olives on top. 
  7. Bake for 20 minutes or until cheese is melted. 
  8. Serve with a sour cream and thinly sliced green onions.
