Low Carb Recipe – Chocolate Mousse Cheesecake

It’s been a while since we’ve had a new cheesecake recipe. It seems that we get new ones fairly frequently — and they are all low carb and delicious. This one was contributed by Jerri. 


  • 2 – 8 oz cream cheese
  • 3-squares of bakers unsweetened chocolate
  • 12-packets of sweetner (add more for taste as needed)
  • 1 – 8 oz of cool whip



Soften cream cheese in microwave.

Melt chocolate in microwave (watch because it can scorched very quickly)

Add sweetener to chocolate and stir.

Beat cream cheese and chocolate together.

Add cool whip and continue to beat until smooth.

Pour into a glass container or tupperware. You can top with cool whip too if you like.

This will take care of any chocolate craving you may have and its delicious too. Its very dense, almost like a mousse. A couple of bits of this and you will be totally satisified and very filling…..

    I am living in South Africa and can’t recall seeing “Cool whip”, what is this ?
