Low Carb Recipe – Crustless Quiche

You don’t often find a recipe that is good for breakfast, for lunch, and for dinner all at the same time, but a good quiche certainly is.

And this one’s a good Quiche!


  • 1 TBL butter (use this to grease the pan)
  • 10 eggs, beaten
  • 1 cup cream
  • 8 ounce pkg shredded cheese (DH likes swiss, cheddars good too)
  • 1 tsp pepper (less if you don’t like pepper)
  • 1lb summer sausage, or smoked sausage, or some other kind of cooked meat–ham, chicken, beef,…possiblities are endless. You can even use cooked crab and shrimp but I think the flavor gets lost. I think you could add more meat if you wanted to too.
  • 2 shakes of Tabasco sauce
  • 1 finely chopped onion — we like to saute it before adding it to the mixture.
    Grease pie plate (cookbook calls for slow-cooker)



In a large bowl, mix together eggs and cream, add all the remaining ingredients, pour into pie plate of slow cooker.

Bake for one hour at 350. OR cook in slow-cooker for 4hrs on LOW.

Serves 6, at 4 net carbs, however your carb count will vary depending on the meat you use and how many carbs it has. From FitDay the Cream, eggs, swiss cheese, and onion will contribute 33 carbs; add in the carb from the meat you use and divide by the number of servings you obtain from your quiche. We are cutting the quiche into 8 slices so we figure it has 4 or 5 carbs in the quiche.

Breakfast sausages, or summer sausages or smoked sausages, or ham can vary quite a bit on their carb content.
