Low Carb Recipes – Basil Grilled Chicken

Basil is one of our favorite herbs at our home, and Chicken is a staple food for us as well. We tend not to each too much beef, and chicken is so easy to prepare.

It’s also easy to become bored by making the same thing every day.

Well that’s about to change with this recipe, which I posted originally in June of 1999. I’m not sure where it came from originally but if you desperately need a new way to prepare chicken, give this a try.


  • 3/4 teaspoon pepper coarsely ground
  • 4 chicken breasts without skin
  • 1/3 cup butter melted
  • 1/4 cup basil, chopped
  • 1/2 cup butter, softened
  • 2 tablespoons basil, minced
  • 1 tablespoon Parmesan cheese, grated
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper


Press 3/4 teaspoon pepper into meaty side of chicken breast halves. Combine 1/3 cup melted butter and 1/4 cup chopped basil; stir well. Brush chicken lightly with melted butter mixture. Combine 1/2 cup softened butter, 2 tablespoons basil, Parmesan cheese, garlic powder, salt and pepper in small bowl. Beat at low speed of an electric mixer until mixture is well blended and smooth. Transfer to a small serving bowl; set aside. Grill chicken over medium coals 8 to 10 minutes on each side, basting frequently with remaining melted butter mixture. Serve grilled chicken with basil-butter mixture.
