Low Carb Recipes – Chicken Asado

This Low Carb Chicken Asado recipe was posted by someone by the name of “Chef Allmax”. He posted quite a few recipes on the original Atkins Diet Help message board, and his recipes became quite popular. This was one of his first, posted in June 1999.

It’s a winner, full of flavor.

CHICKEN ASADO

Ingredients

  • 1 ea Chicken, whole 3-4 lb average
  • 1 pk Red Chilis, dried whole peppers, cut into larger pieces, about 4 ounces*
  • 1 ea Onion, cut into large chunks
  • 6 ea Garlic, cloves
  • 1 cn Tomato Sauce, 12 ounces
  • 1 T Cumin, ground


Method

Place 1 and ½ inches of water in bottom of a dutch oven or pot that will fit the whole chicken.Place chicken in the pot.Bring water to a boil.Cover pot with tight fitting lid and simmer chicken until it is almost falling off the bone, about 1 ½ hours.Remove chicken from the pot and let cool.

Place all the additional ingredients into pot and simmer until dried chilis become very soft, about ½ an hour.

With a slotted spoon remove the onions, garlic and peppers and place in a blender or bowl of a food processor.

Puree mixture, adding enough of the cooking liquid to make a smooth paste.

Pour puree back into pot and simmer till thick.

Remove about half of the sauce and reserve for another time

Shred the chicken meat and place into the pot and let simmer for about 15 minutes.

Serve with tortillas, diced green onions, shredded cheese, diced tomatoes, shredded lettuce.
*You may substitute red chile powder. This is not chilli con carne seasoning and this is not cayenne, but it is a powder of ground dried red chiles. Look for a chimayo chile powder or a chile rojo or a New Mexican chile powder.
