Nutty Spinach Salad

Need a nice salad to enjoy on those warm summer days? This delicious nutty spinach salad is perfect for any time, any where!

4 cups shredded Spinach
3 tbs slivered almonds
1 Lrg. clove of garlic
1/4 cup olive oil
1 tbs raspberry balsamic vinegar
2 tsp dijion mustard
2 tbs cider vinegar
2 tsp. Splenda
2 oz Crumbled cheese (brie, feta, or bleu)
Parmesian cheese

Grease pan and heat on med high. Toast almonds until golden brown. Add garlic just as almonds start to turn color. In a medium bowl, mix raspberry balsamic vinegar, splenda, dijon & salt/pepper to taste. Carefully mix in hot oil. Immediately pour dressing over spinach. The spinach should soften somewhat, if not let sit for 10 minutes. Toss salad with parmesian and your choice cheese.
